Summary / History

HEIRLOOM - Michael Mazourek, a plant breeder and professor at Cornell University in Ithaca, New York, developed the Habanada pepper in 2007. The name is a whimsical blend of "habanero" and the Spanish word "nada", which translates to nothing. It all began when the University of New Mexico discovered a naturally occurring off-type, heatless habanero plant growing in their research field. The university sent seeds of this heatless variety to Mazourek, who then spent 13 generations breeding and refining the plant to perfectly isolate the sweet, tropical, and melon-like taste of a habanero without the painful burn. The Habanada was introduced to the culinary world in 2014 when it was featured at the Culinary Breeding Network Showcase in Portland, Oregon. Chefs immediately embraced the pepper because it was completely heatless and could be used anywhere, which led to its adoption in fine dining and farm-to-table restaurants. That same year, following its chef-led debut, the seeds were quickly distributed to market farmers and home gardeners.

Plant Characteristics

The Habanada pepper has the sweet, fruity, and floral flavor of a traditional habanero minus the heat. Measuring an absolute 0 on the Scoville (SHU) scale, it is the world's first true heatless habanero. Closely resembling traditional habaneros, the lantern-shaped, 2-3 inch long peppers feature a wrinkled and folded skin. Ripens from green to a vivid tangerine-orange when fully mature. Habanadas are highly versatile in both raw and cooked applications because they lack the burning capsaicin of traditional habaneros. Eat or cook the entire pepper, as the flesh, seeds, and membranes are all edible and bursting with flavor. They can be sliced into fresh summer salads and salsas or blended into marinades and homemade hot sauces. Plants typically grow 2 to 4 feet tall, making them highly versatile for garden beds or large containers. Compact and bushy plants grow quickly upright, naturally forking into a "Y" shape and resembling a miniature tree. Highly productive plants bear abundant yields of peppers all summer long; it is recommended to stake or trellis plants to prevent them from toppling.
