Mulato Isleno is a variety of pepper from Mexico. It is similar to the poblano in terms of size and shape, however the Mulato Isleno is slightly longer, fatter, and sweeter. Peppers start out dark green and then mature to a rich chocolate brown color. Peppers are about 6 inches long by 3 inches wide, which makes them perfect for stuffing. Very mild heat with sweet rich flavor. Mulato Isleno peppers are a key ingredient in mole sauce and chile rellenos. Peppers can be used fresh, but are preferred dried.
