The Padron is a famous Spanish heirloom pepper that was named after the town it originated from. This pepper is also known as Pimiento De Padron. The flavor is described as sweet and mild, however, about 1 out of 20 peppers will be hot. These peppers must be harvested when they are 1 to 1.5 inches long. If the peppers are harvested when they are 2 to 3 inches long, all the peppers will be hot. Traditionally Padron peppers were eaten as tapas, or appetizers, in Spain. They were served sauteed in olive oil with a little sea salt.
