Arugula is a pungent, leafy green vegetable. The leaves have a nutty, peppery, mustard-like flavor that packs quite a punch. Young leaves taste best and can be eaten raw, sautéed, or steamed. They can also be added to salads, pizza, sandwiches, and pasta. In addition to its nutty, peppery taste, the leaves are a good source of calcium, iron, and vitamins. The most popular variety of arugula is Roquette. If you prefer a wild arugula, grow Sylvetta. If you like arugula but prefer a more mild flavor, we recommend growing Astro. Arugula is a cool season annual that should be planted in full sun and fertile, well-drained soil.
