Summary
HEIRLOOM - Bronze Fennel does not form a white, swollen base, or bulb like traditional fennel. Instead the plant produces bronze-red and dark green feathery leaves. The feathery foliage has a sweet anise flavor. Leaves make a great addition to soups, stews, and salads. Seeds can be used in baking or as a digestive aid. This non-bulbing variety is slow bolting. Bronze fennel is a deep smokey perennial version with aromatic feathery foliage and yellow umbel flowers. All parts are edible, a wonderful accent for the pollinator garden. This is a host plant for the Black Swallowtail butterfly caterpillar. This leaf fennel is a slow grower with very thin stems valued for its striking feathery bronze foliage. Sturdy but also delicate looking plants reach 5-6 feet tall. Harvest Bronze Fennel leaves early for a milder flavor or at maturity for a deeper and more intense anise flavor. French Tarragon has a spicy kick that fennel does not, and yet both have the anise flavor. By the end of the summer it will put up tall spikes that will be covered with little yellow button flowers. If left on the plant, these will turn brown and make fennel seeds. An aromatic perennial herb (zones 5-12), Fennel is widely cultivated for its edible, licorice-flavored leaves and seeds. The variety 'Purpureum,' also known as Bronze Fennel, has dark, smoky foliage to a height of 6', an attractive backdrop in perennial gardens, where it adds a soft, airy, mysterious unique look. Bronze Fennel is also a perennial that's been used for medicinal purposes dating back to ancient Egypt.
