Kale is considered to be the hardiest of all vegetables. Kale is a cool season vegetable that is frost tolerant. Its sweet flavor is enhanced by frost and cold weather. Kale is high in nutrients such as protein, fiber, and vitamins A, C, and K. Kale leaves can be harvested as young, fresh, tender leaves, or fully grown. Leaves are delicious in salads, fantastic cooked, or stuffed like cabbage. Our most tender and best tasting variety of kale we offer is Lacinato. If you are looking for an incredibly cold-tolerant kale, we recommend Red Russian or White Russian. Sow in early spring and again in midsummer for fall greens.
